Chef Herve Bochard began cooking at a young age, leaving school early to pursue a career as a chef. After traveling the world, he returned to his native France where he attained international acclaim in fine dining. He had long dreamed of bringing French cuisine to New York’s Hudson Valley, one of America’s most beautiful and agriculturally abundant regions. In 2003 he left France to open Cafe Les Baux in Millbrook with his wife. Today, Cafe Les Baux is recognized as one of the region’s top award winning restaurants.
